A garlicky vegetable soup that gets its body from a handful of oats instead of cornflour or cream. Twenty minutes, one pot, and properly filling.

Ingredients
- ⅓ cup (30 g) rolled oats
- 1 tbsp (14 ml) olive oil or any neutral oil
- 4 cloves garlic (12 g), finely chopped
- 1 tsp (5 g) finely chopped ginger
- 1 small onion (60 g), finely chopped
- 1 small carrot (50 g), finely diced
- 6 French beans (30 g), finely chopped
- ¼ cup (35 g) sweet corn kernels
- ¼ cup (35 g) green peas
- ½ cup (35 g) chopped cabbage or broccoli florets
- 2½ cups (600 ml) water or homemade vegetable stock
- ½ tsp crushed black pepper, ½ tsp dried oregano or mixed herbs, ¼ tsp chilli flakes
- Salt, to taste (about ¾ tsp)
- 2 tsp (10 ml) lemon juice
- 2 tbsp chopped coriander leaves or spring onion greens
Method
- 1Heat the oil in a saucepan on medium. Add the garlic and ginger and stir for about 40 seconds until fragrant but not browned.
- 2Add the onion and cook 2 minutes until it softens. Add the oats and stir them through the oil for 1 to 2 minutes until they smell lightly toasted.
- 3Add the carrot, beans, corn, peas and cabbage. Toss for 2 minutes on medium-high heat so the vegetables lose their raw edge.
- 4Pour in the water or stock with the salt and bring to a boil. Lower the heat and simmer, partly covered, for 8 to 10 minutes, stirring once or twice, until the carrot is tender and the soup has thickened slightly.
- 5Stir in the pepper, herbs and chilli flakes. If the soup is thicker than you like, add hot water a little at a time.
- 6Turn off the heat, add the lemon juice and coriander, and taste for salt. Ladle into bowls while hot.
Notes from the Department
- The soup thickens as it cools. Thin leftovers with hot water before reheating.
- For a smoother, restaurant-style soup, blend one ladleful and stir it back in.
- Steel-cut oats work too: toast them 3 minutes and simmer 20 minutes with an extra cup of water.

Why this works
Most quick vegetable soups lean on a cornflour slurry for body. Oats do the same job on their own. As they simmer they release beta-glucan, the soluble fibre oats are known for, and that gives the broth a gentle, silky thickness. Toasting the oats in the garlic oil first adds a nutty note and stops them from clumping. The result is a soup that eats like a light meal.
Which oats to use
Rolled oats are our pick: they soften fully in 10 minutes but leave a little texture. Quick oats thicken faster, so add them with the water and cook 5 minutes. Steel-cut oats give a chewy, barley-like soup if you have the time.
Swaps
Use whatever vegetables are in the fridge: mushrooms, spinach, zucchini, cauliflower or diced potato. For more protein, add ½ cup boiled chickpeas or cubes of tofu or paneer in the last 3 minutes. For a no-onion no-garlic version, skip both and use more ginger with a pinch of cumin. This recipe is gluten-free as written, provided your oats are certified gluten-free and your stock is homemade; many stock cubes contain wheat.
What to serve with it
Toasted multigrain bread, a cheese toast or a simple sandwich make it dinner. On its own, it is a warm, light starter.
Storage
Keeps 2 days in the fridge in a closed container. Reheat on the stove with a splash of water and add a fresh squeeze of lemon. It freezes for up to a month, though the vegetables soften a little.
Questions people ask
- Do oats make soup thick?
- Yes. Simmered oats release soluble fibre that thickens the broth, so you do not need cornflour or cream. A third of a cup is enough for two bowls.
- Can I use quick oats in oats soup?
- Yes. Add them with the water instead of toasting, and simmer about 5 minutes. They thicken faster, so keep some hot water ready to adjust.
- Is oats soup good for dinner?
- It is light but filling thanks to the oats and vegetables. Pair it with toast or add chickpeas or paneer if you want a fuller meal.
