Rolled oats cooked like risotto with browned mushrooms, garlic, thyme and a little cheese. Creamy in 20 minutes, no arborio and no endless stirring.

Ingredients
- 1 cup (90 g) rolled oats
- 200 g button mushrooms, sliced
- 2 tbsp (27 ml) olive oil, divided
- 1 small onion (60 g), finely chopped
- 4 cloves garlic (12 g), finely chopped
- 2 cups (480 ml) hot water or homemade vegetable stock
- ½ tsp dried thyme or 3 sprigs fresh, ¼ tsp chilli flakes, ½ tsp crushed black pepper
- Salt, to taste (about ¾ tsp)
- 1 tbsp (14 g) butter
- ¼ cup (25 g) grated vegetarian hard cheese or processed cheese
- 1 tsp (5 ml) lemon juice
- 2 spring onion greens (10 g), chopped
Method
- 1Heat 1 tbsp olive oil in a wide pan on high heat. Add the mushrooms in a single layer and leave them untouched for 2 minutes, then stir and cook another 3 to 4 minutes until browned and any liquid has evaporated. Season with a pinch of salt and lift out half for topping, leaving the rest in the pan.
- 2Lower the heat to medium and add the remaining oil. Cook the onion for 3 minutes until soft and translucent, then add the garlic and thyme and stir for 30 seconds.
- 3Add the oats and stir for 2 minutes until they smell toasty and are coated in oil.
- 4Pour in 1 cup of the hot water or stock and stir. When it is mostly absorbed, about 3 minutes, add another ½ cup and stir again.
- 5Add the last ½ cup and cook 3 to 4 minutes more, stirring every minute, until the oats are tender and the mixture is creamy and loose, like a thick porridge that just spreads on the plate.
- 6Take the pan off the heat. Stir in the butter, cheese, pepper, chilli flakes and lemon juice. Taste and adjust salt.
- 7Spoon into warm plates, top with the reserved mushrooms and spring onion greens, and serve immediately.
Notes from the Department
- Brown the mushrooms in a hot, uncrowded pan and salt them only at the end; crowded or salted early, they stew and go grey.
- Risotto keeps thickening on the plate. Take it off the heat when it is a little looser than you want.
- Use hot liquid. Cold water stalls the cooking and makes the oats gluey.

Why this works
Arborio rice turns creamy because it sheds starch as you stir. Oats do the same thing faster and with less effort. Rolled oats release their starch and soluble fibre within minutes, so a few additions of hot liquid give a properly creamy, spoon-coating texture without half an hour at the stove. Browning the mushrooms hard first gives the dish its savoury depth.
Rolled or steel-cut oats
Rolled oats give a soft, creamy risotto in about 12 minutes of simmering. Steel-cut oats are closer to the real thing, with separate chewy grains: toast them 3 minutes and add about 4 cups of hot liquid in stages over 30 to 35 minutes. Quick oats go pasty; we would avoid them here.
About the cheese
Traditional Parmesan is made with animal rennet, so it is not vegetarian. Use a vegetarian hard cheese, a mild processed cheese or a spoon of fresh cream. For a vegan version, skip butter and cheese and stir in 2 tbsp cashew paste with a spoon of nutritional yeast.
Swaps
Oyster or shiitake mushrooms bring more flavour. Add a handful of spinach or peas in the last minute. This recipe is gluten-free if you use certified gluten-free oats and homemade stock, since many stock cubes contain wheat.
Storage
Best eaten straight away. Leftovers keep a day in the fridge; reheat gently with a splash of hot water or milk, stirring until creamy again.
Questions people ask
- Can you make risotto with oats?
- Yes. Oats release starch the same way arborio rice does, so they turn creamy when cooked with hot liquid added in stages. Rolled oats are ready in about 12 minutes.
- Which oats are best for oat risotto?
- Rolled oats for speed and creaminess, steel-cut oats for a chewier, more rice-like texture. Steel-cut needs about twice the liquid and 30 minutes or more.
- Is oat risotto vegetarian?
- It is when you avoid Parmesan, which is made with animal rennet. Use a vegetarian hard cheese, processed cheese or cream instead.
