Rolled oats, ice-cold water, a 30-second blend and a cloth. Our method for oat milk that stays creamy, not slimy, and costs a fraction of the carton.

Ingredients
- 1 cup (90 g) rolled oats
- 4 cups (960 ml) ice-cold water
- 1 soft date, pitted (optional, 8 g)
- A pinch of salt
- ¼ tsp vanilla extract (optional)
Method
- 1Rinse the rolled oats in a sieve under the tap for a few seconds to wash off loose starch. Drain well.
- 2Put the oats, ice-cold water, date, salt and vanilla into a blender jar.
- 3Blend on high for 25 to 30 seconds only, just until the oats are broken down and the liquid looks milky. Do not blend longer.
- 4Line a sieve with a clean muslin cloth or a nut-milk bag and set it over a large bowl. Pour the mixture through.
- 5Let it drip for 2 to 3 minutes, stirring the pulp gently with a spoon. Lift the cloth and give it one light squeeze; do not wring it hard.
- 6For extra-smooth milk, strain it a second time through a clean cloth or a fine tea strainer.
- 7Pour into a clean glass bottle and refrigerate. Shake well before every use.
Notes from the Department
- Cold water and a short blend are the two rules. Heat and long blending turn oat starch gluey.
- Do not soak the oats first. Soaked oats release more starch into the milk.
- For a richer milk for coffee, blend in 1 tsp neutral oil or 5 to 6 cashews.

Why this works
Oat milk turns slimy for one reason: oat starch. Warmth and friction from a long blend start to gelatinise it, and squeezing the pulp hard pushes the gel through the cloth. So everything in this method keeps the oats cold and the blend short. Rinsing the oats first removes surface starch, ice-cold water slows the blender's heat, and a light squeeze gets the milk without the gloop.
The ratio of 1 cup oats to 4 cups water gives a milk close to toned dairy milk in body. Use 3 cups water for something creamier, closer to a barista carton. The date and salt are for drinking; skip both if you are cooking savoury dishes with it.
Using it
Pour it cold over muesli or overnight oats, blend it into smoothies, or use it in chai. When you heat it, warm it gently and take it off before a rolling boil, because homemade oat milk thickens as it gets hot, much like a thin porridge. That thickening is normal and not a sign anything went wrong. The leftover pulp can go into rotis, pancakes or a batch of oat cookies the same day.
Storage
Keeps 4 to 5 days in the fridge in a sealed glass bottle. It separates as it sits, so shake it every time. If it smells sour, throw it out. For a gluten-free milk, start with certified gluten-free oats. The nutrition figures on this page assume the pulp is strained out: only about a third of the oats end up in the milk, so we count roughly 32 g of the 90 g.
Questions people ask
- Why is my homemade oat milk slimy?
- It was blended too long, made with warm water, or the pulp was squeezed too hard. Keep the blend under 30 seconds, use ice-cold water and press the cloth only lightly.
- Can I heat homemade oat milk for chai?
- Yes, but warm it gently and do not let it boil for long. Homemade oat milk thickens when heated. If it gets too thick, whisk in a splash of water.
- Can I use quick oats or steel-cut oats?
- Rolled oats give the cleanest result. Quick oats work but turn slimy faster, so blend them for 15 to 20 seconds only. Steel-cut oats need a longer blend and give a thinner milk.
- What can I do with the leftover oat pulp?
- Stir it into roti or paratha dough, pancake batter, or cookie dough. Use it within a day or freeze it.
