Why it works
Blueberries on their own can be a bit polite. Lemon zest wakes them up. It brings the fragrance of lemon without the sourness of juice, so the jar tastes bright rather than sharp. Honey sweetens just enough, and the zest stops it from tipping into too sweet.
Zest, not juice
The zest is where the lemon flavour lives. Grate only the yellow outer skin; the white pith underneath is bitter. Be generous. A small squeeze of juice is fine if you like extra tang, but too much can make the milk taste a little off.
Swaps
Frozen blueberries work and release more juice, giving the oats a purple tint. Orange zest makes a softer, sweeter version. Maple syrup can replace honey, and with the oat milk jar that keeps it dairy-free and vegan. A spoon of Greek yogurt on top adds a cheesecake mood.
No DIY Oats jar?
Soak rolled oats overnight in milk with a spoon of chia and a few almonds, then add the berries, zest and honey.
Storage
Keeps covered in the fridge for a day or two. The zest flavour fades a little after the first day, so a fresh grate in the morning helps. Per serving: around 466 calories, 15g protein and 11g fibre.
Questions people ask
- Can I use lemon juice instead of zest?
- Zest gives the best lemon flavour without souring the milk. A small squeeze of juice is fine alongside it, but juice alone tends to taste flat or sharp.
- Can I use frozen blueberries?
- Yes. Add them straight from the freezer. They thaw overnight and colour the oats with their juice.
- How long do lemon blueberry overnight oats keep?
- A day or two, covered, in the fridge. Add fresh zest before eating for the brightest flavour.
