Why it works
Before overnight oats had a name, there was Bircher muesli. A Swiss physician made it around 1900 by soaking oats and folding in grated apple. The idea has outlasted most things from that year. Grated apple melts into the oats and sweetens them gently, lemon keeps the apple bright and adds a clean, sharp note, and honey rounds it off.
Grate, don't dice
This is the one recipe where the apple should disappear. Grate it on the coarse side of a grater, skin and all, and stir it straight in. Add the lemon juice right away so the apple doesn't turn brown. The result is soft, fresh and lightly fruity rather than chunky.
Make it yours
Traditional versions often add chopped nuts or a spoon of yogurt on top, and both suit it. A pear can share the job with the apple. If your apple is sweet, go easy on the honey. Without a DIY Oats jar, soak rolled oats overnight in milk with chia and a few almonds, then add the apple and lemon.
Storage
Keeps covered in the fridge for a day. The lemon helps it stay pale and fresh-tasting into the second serving.
Questions people ask
- What is the difference between Bircher muesli and overnight oats?
- Bircher muesli is the original version, built around grated apple and lemon. Overnight oats are the broader family that grew out of it.
- Why add lemon juice to Bircher muesli?
- It stops the grated apple from browning and adds a fresh, tangy flavour that balances the honey.
- Can I make Bircher muesli without honey?
- Yes. A sweet apple is often enough. For a vegan version, use the oat milk jar and swap honey for maple syrup.
