Everything you love about lemon rice, in ten minutes, with oats. Mustard, curry leaves, crunchy peanuts and dals, turmeric and a bright squeeze of lemon.

Ingredients
- 1 cup (90 g) rolled oats
- ¾ cup (180 ml) water
- 1½ tbsp (22 ml) oil, preferably groundnut or sesame
- 2 tbsp (18 g) raw peanuts
- ½ tsp mustard seeds
- 1 tsp (5 g) urad dal
- 1½ tsp (7 g) chana dal
- 2 green chillies (10 g), slit
- 1 dried red chilli, broken; a pinch of hing
- 1 sprig curry leaves
- 1 tsp (5 g) grated ginger
- ¼ tsp turmeric
- Salt, to taste (about ½ tsp)
- 1½ tbsp (22 ml) lemon juice, from about 1 lemon
- 1 tbsp chopped coriander leaves
Method
- 1Dry roast the oats in a wide pan on low heat for 4 minutes, stirring, until they smell toasty and feel crisp. Tip them onto a plate.
- 2In the same pan, heat the oil on medium. Fry the peanuts for 2 minutes until they crackle and brown in spots, then lift them out with a slotted spoon.
- 3Add mustard seeds to the oil. When they pop, add the urad and chana dal and stir until both turn light golden, about 1 minute.
- 4Add the green chillies, red chilli, curry leaves, ginger and hing. Stir for 20 seconds, then add the turmeric and immediately pour in the water with the salt.
- 5Once the water boils, add the roasted oats and stir well. Cover, lower the heat and cook 3 minutes until the water is absorbed and the oats are tender but separate.
- 6Uncover, drizzle in the lemon juice and toss gently with a fork. Cook 1 minute more on low heat to dry it slightly.
- 7Turn off the heat, fold in the fried peanuts and coriander, and serve warm.
Notes from the Department
- Use only as much water as the recipe says. Too much and you will have lemon porridge, which is a different (and lesser) dish.
- Add the lemon off high heat. Boiling lemon juice makes it taste flat and slightly bitter.
- For the lunchbox, add an extra teaspoon of oil at the end; it keeps the grains separate as they cool.

Why this works
Lemon rice is about three things: a crackling tadka, turmeric, and lemon added at the end. None of that needs rice. Rolled oats, roasted first and steamed with a measured amount of water, stay in separate flakes and take on the tadka the same way rice does. The result is tangy, savoury and ready in the time it takes rice to come to a boil.
Getting the texture right
The roast and the water ratio decide everything. Roasting firms up the flakes so they do not collapse. With rolled oats, ¾ cup water to 1 cup oats gives a fluffy, upma-like finish. If you use quick oats, cut the water to ½ cup and cook only 2 minutes. Instant flavoured oats will not work here.
Swaps
Add ½ cup grated carrot or boiled peas with the water for a fuller meal. Cashews can replace peanuts. Skip the green chillies for children and use a pinch of black pepper. Hing often contains wheat; if you need this gluten-free, leave it out and use certified gluten-free oats, and the dish still holds up well.
What to serve with it
Plain curd, coconut chutney or a quick cucumber raita. A papad on the side adds the crunch lemon rice usually gets from the peanuts alone.
Storage
Lemon oats is best eaten within 4 hours, which makes it ideal for a lunchbox packed in the morning. Refrigerated leftovers keep a day; sprinkle with water and warm covered on low heat.
Questions people ask
- Can I make lemon oats with quick oats?
- Yes. Reduce the water to about ½ cup and cook for 2 minutes only. Quick oats soften faster, so toss gently to keep them from mashing.
- Is lemon oats good for a lunchbox?
- It packs well for a few hours. Add a teaspoon of oil at the end and fluff it with a fork before packing so the flakes stay separate as they cool.
- Why are my lemon oats mushy?
- Usually too much water or skipped roasting. Roast the oats until crisp and stick to ¾ cup water per cup of rolled oats.
