Firm, smoky rajma patties held together with oats instead of egg or breadcrumbs. They brown well on a tawa, bake or air fry, and do not fall apart in the bun.

Oat and rajma veggie burger with a browned patty, lettuce, tomato and onion in a toasted whole wheat bun

Ingredients

  • ¾ cup (68 g) rolled oats
  • 1½ cups (260 g) cooked rajma (red kidney beans), drained and patted dry
  • 1 small boiled potato (80 g), peeled
  • 1 small carrot (60 g), finely grated and squeezed
  • 1 small onion (60 g), very finely chopped
  • 2 cloves garlic (6 g), minced
  • 1 green chilli (5 g), minced
  • 2 tbsp chopped coriander leaves
  • 1 tsp smoked or Kashmiri paprika, 1 tsp roasted cumin powder, ½ tsp black pepper, ½ tsp dried oregano
  • Salt, to taste (about ¾ tsp)
  • 1 tsp (5 ml) lemon juice
  • 1½ tbsp (22 ml) oil, for the tawa

Method

  1. 1Pulse the oats in a mixer jar 6 to 8 times until coarsely chopped, not powdered. Tip them into a large bowl.
  2. 2Add the rajma and potato to the same jar and pulse 4 to 5 times into a chunky mash, leaving some beans half whole. Alternatively, mash both with a potato masher.
  3. 3Add the mash to the oats with the carrot, onion, garlic, green chilli, coriander, spices, salt and lemon juice. Mix with your hands until it holds when squeezed.
  4. 4Rest the mixture 10 minutes so the oats absorb moisture. If it still sticks badly to your palms, add 1 to 2 tbsp more oats.
  5. 5Divide into 4 portions and shape into patties about 1.5 cm thick and 9 cm wide, pressing the edges smooth so they do not crack.
  6. 6Heat a tawa or heavy pan on medium and brush with half the oil. Cook the patties 4 to 5 minutes without moving them until a dark crust forms.
  7. 7Brush the tops with the remaining oil, flip carefully and cook another 4 minutes until crisp and hot through. Rest 2 minutes before assembling.

Notes from the Department

  • Dry beans matter. Pat the rajma with a cloth; wet beans make soft patties.
  • Chill the shaped patties for 15 minutes if you have time. They hold better and flip cleanly.
  • Flip once only. Moving the patty early tears the crust before it has set.

Why this works

Most bean burgers fall apart because they rely on egg that is not there. Chopped rolled oats fix that. They soak up moisture from the beans and potato, then set as they heat, which gives a patty that holds in a bun yet stays tender inside. Keeping some beans chunky gives bite, and the smoked paprika and cumin take it toward a grill flavour without a grill.

Oven and air fryer

Bake on a lined tray at 200°C for 20 minutes, flipping at the halfway mark, after brushing both sides with oil. In an air fryer, cook at 190°C for 12 to 14 minutes, turning once. The tawa gives the darkest crust; the oven is easiest for a crowd.

Swaps

Boiled chickpeas or black beans can replace rajma one for one. Sweet potato can replace the regular potato. Quick oats work without pulsing. For no onion and garlic, leave both out and add ½ tsp grated ginger and a pinch of chaat masala. The patty is gluten-free with certified gluten-free oats; serve it in a gluten-free bun or a lettuce wrap.

How to serve it

Toasted whole wheat buns, a smear of mint-coriander chutney or hung curd dip, sliced onion, tomato, lettuce and a slice of cheese if you like. They also go well crumbled into a salad bowl with salsa.

Storage

Cooked patties keep 3 days refrigerated; reheat on a hot tawa. Freeze uncooked patties between sheets of baking paper for up to 2 months and cook from frozen, adding 2 to 3 minutes per side.

Questions people ask

How do you make a veggie burger hold together without egg?
Use coarsely chopped oats and a little boiled potato as binders, keep the beans dry, and rest the mix 10 minutes before shaping. Chilling the patties helps too.
Can I use quick oats in a veggie burger?
Yes. Use the same amount and skip the pulsing step. The patty will be slightly softer inside.
Can I freeze oats veggie burger patties?
Yes. Freeze them uncooked, separated with baking paper, for up to 2 months. Cook straight from frozen on a medium tawa with a few extra minutes per side.
